There are several famous SAKE breweries in Japan. As Kyoto was the capital of Japan for long time and easy to get good water, still there are several famous breweries around Kyoto area.

If you say SAKE in Japanese points a liquid contains more than 1% of alcohol. SAKE which you say is NIHONSHU. It has classification of Jozo, Junmai, Hon-Jozo, Tokubetsu-Junmai, Ginjo, Daiginjo, etc. SAKE taste are different each breweries as same as wine and winery.

 SAKE also calls as “Rice Wine”, so please treat as a kind of wine and please finish it within one or two days especially it is Junmai category.
