The main characteristic of Kyoto sweets is their design, which expresses the sense of seasons.
While cakes with seasonal fruits are available in other places, in Kyoto we express seasonality with shape. We use the shape of a cherry blossom in spring, Kuzu (a semi transparent sweet made of arrowroot) in summer, red leaves in autumn; and we use powdered sugar to represent snow in winter. It’s not an exaggeration to say that not only the tastes, but also the detailed and sophisticated designs and colors, are true pieces of art.
Kyoto Sweets originate also from another of its popular and traditional customs — the Tea Ceremony, where the guests are served with carefully selected sweets reflecting the seasons.
