Color of Soup

When Japanese compare between West Japan and East Japan, the color of soup will appear as usual.

A West area person tries Eastern soup at the first time, the person worry about the taste as the soup has less color like water.

An East area person tries Western soup at the first time, the person worry about the taste as the soup has too dark like soy source.

Actually, there is no difference of salt density and those are delicious.

If I say a difference, the density of inocinic acid and amino acid contains more in Western soup in general.

By the way, Kyoto has traditional unique white soup. As my experience, the taste of white soup is taste of occidental people.
